Taco Tuesday (and the other days of the week)

Taco Tuesday has been around for a long time. And tacos are good. But what about the other days of the week?? Why don’t they rate something yummy?? And of course, these are just suggestions. Actually, you can eat ANYTHING YOU WANT AT ANY TIME!! YOU’RE A GROWN-UP!! So…

Waffle Wednesday

I know, I know. That’s a breakfast food. WRONG!! Waffles are good at any time of the day. Many times growing up we had waffles or pancakes for dinner. Bacon was included, of course. We didn’t use butter (too expensive) but there was plenty of margarine and Karo syrup.

Tater Thursday

Baked potato. Plenty of butter. Bacon. Chili. Cheese. Eat the first layer. Add more of the previous stuff. Eat that layer. One last layer and you’ve had a mighty filling dinner. OR – you can just start out by cutting up the tater, spreading it out on your plate and then adding copious amounts of the above mentioned ingredients. Either way it’s delicious.

Fried Friday

YOUR CHOICE!! Fried chicken. Fried fish. Fried green tomatoes (gag). Fried eggs. And this also includes deep-fried food: pickles (don’t knock ‘em until you’ve tried ‘em), shrimp, various veggies. You can also make very acceptable fried donuts using canned biscuits. Granted, this is not the healthiest of meals, but hey…you’ve survived the week. You deserve a treat going into the weekend.

Spaghetti Saturday

If you cavil at spaghetti, you are allowed to substitute any pasta of your choice. And spaghetti can be with or without meatballs. Growing up, we always had hamburger. A pound of hamburger can be stretched quite far. Sauce of your choice – red or cream based. I grew up with Campbell’s tomato soup (undiluted) as the sauce. If you really don’t want to make an effort, plenty of butter and parmesan cheese makes a good meal.

Sundae Sunday

What else would you have? Eat anything you want for dinner, but end it with a sundae. Load up on that sugar and carbs in prep for the coming work week. Maybe even make two of them. Eat one and stick the other one in the freezer for the next night. You will thank yourself when you get home Monday night and have that treat waiting for you. You can even eat it BEFORE you have dinner. Remember: GROWN-UP!

Macaroni Monday

I know, this sounds a lot like Spaghetti Saturday, but hear me out. This particular dish is one that I’ve shared the recipe for at least 2-3 times. It’s called Macaroni and Hot Dogs. And again, it’s a super easy meal to make when you’ve just gotten through the day and know you have FOUR MORE DAYS TO GO IN THE WEEK. Take 2 cups dry macaroni. Cook and drain. Add half a pkg. of hotdogs, cut up and heated. Add 1 can tomato soup (undiluted) and 2 teaspoons of chili powder (or more if you like it spicier). 1 slight teaspoon of sugar. Salt to taste. Mix it all up and reheat it in the microwave so it’s nice and hot. Dump as much parmesan as you want on it. Yum. THEN – if you didn’t eat your sundae before dinner, you can have it now and give thanks that Monday is over.
